Polenta – perfect for gluten free diets

I love Polenta! It reminds me of the time when I was a little girl warming myself in cold winter with my grandmother’s delicious polenta. Polenta is originally an Italian word and it stands for finely ground yellow or white maize (cornmeal). Polenta is made up of complex carbohydrates that give us more sustainable energy. It is Gluten Free and packed with healthy nutritions such as zinc, iron, thymine, magnesium and phosphorous. You can enjoy it for breakfast, lunch, dinner or snack as a sweet or savory side dish or main course. You can grilled it, baked it or even used is a Pizza base. Healthy and delicious!

Polenta is very easy to cook. You just need cornmeal, water, oil and little salt. Here are the instructions:

Ingredients (serves 4 people as a side dish):

  • 6 cups water
  • 2 teaspoons salt
  • 1 3/4 cups yellow cornmeal
  • 3 tablespoons of any vegetable oil (I usually use extra virgin olive oil)

Directions:

Boil 6 cups of water and 2 teaspoons of salt. Gradually whisk in the cornmeal and add oil. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender. It should come away from sides of the pan, and be able to support a spoon. This can take anywhere from 20 to 50 minutes. Pour polenta onto a wooden cutting board, let stand for a few minutes. If you want to have a more liquid version, cook it with more water. Enjoy!
